Garbanzo Bean with Spicy Vegan Sausage Soup ♥ Servings: 10 Time: 45 mins Prep Time: 10mins Ingredients: 64 oz. of garden vegetable broth 2 cups of water (more if needed, be careful not to put to much or this will Water down the soup and lose flavor) 1 small whole red onion (peel skin and cut off ends) 2 organic medium carrots (peel skin and slice) 6 garlic cloves peel skin and slice (I usually dice this, but I found slicing them In small pieces brings more flavor) 1lb. garbanzo beans (drained) 14 oz. of Original Vegan Italian Sausage (I used Tofurky) 1 cup of brown rice (optional) 3 large potatoes (peel skin, cut into squares) Hand full of organic fresh spinach 2tbsp total seasoning (I used Casero brand) (I also added extra for flavor, additional seasoning with this product is optional) dash of black ground pepper 1tbsp of salzon (red) (without MSG) Cooking Instructions: Pour broth and water into a large soup pot, turn on heat to medium, then, put onion, garlic, carrots into the pot and let cook for about 5 mins., then turn up heat to high, (use judgement on temp. some ranges vary in heat), bring to a boil and then lower to medium heat. Add, potatoes, all seasonings, let cook for about 30 mins. Once the potatoes and carrots are soft and firm, then add vegan sausage, cook for about 10 mins. Continually stir as you add each ingredient. Finally, add the spinach and cook for about a minute and serve. – Brown rice should cook at the same time as the soup. Brown rice tends to need a little extra cook time for perfect taste. This is cooked separately and can be eaten with the soup. (Cook brown rice according to the package) MANGIA!!
