Prep time: 10 mins. Cook time: 30 mins. Serves: 5-7 *When possible use fresh and organic ingredients! Ingredients: 1 ½ Cubes of Firm Tofu (organic)-diced ½ Yellow onion – diced ½ Green pepper – diced 1 Cup Baby Bella mushrooms – sliced (washed) 1 tbsp. garlic powder (organic) 1 tsp. already smashed ginger or ¼ fresh ginger minced ¼ tsp. honey 1 tbsp. Sazón 2 tbsp. soy sauce (more if desired) 1 tbsp. Vegetable oil 1 tsp. Sesame Seed Oil *I used some left over Spanish yellow rice as a side dish* Directions: 1st: Put vegetable oil in a pan and turn on stove medium heat. 2nd: Place onion and green pepper in pan and mix with oil, cook for a min. 3rd: Put Baby Bella mushrooms in next and mix 4th: Sprinkle garlic powder over the veggies and add ginger and mix well 5th: Put tofu in the pan and mix well with all the veggies and the other ingredients in the pan 6th: Add soy sauce and sesame seed oil and mix well 7th: Add honey and Sazón – mix with all ingredients and cook for another min or two and then serve over rice or any other side dish.
