Time prep: 10 mins. Cook time 20 mins.
2 lb. extra-firm tofu
5 cloves of garlic, minced (you don’t have to use as much garlic as suggested)
1 small yellow onion, diced small
5 Roma tomatoes, cut in halve
2 tsp. cumin, smoked paprika and red salzon ( salzon I use a little more for taste)
1 tsp. turmeric (use more for flavor if needed)
1/2 cup of organic baby spinach
dash of pepper
1 tbsp. of extra virgin olive oil
First, put olive oil in heated pan, (medium heat) then add onion, garlic and tomatoes, saute for about one minute. Then, drain tofu from package and dice up the tofu and add to the pan, cook for about one minute. Then add cumin, smoked paprika, turmeric, salt, pepper and salzon. Mix well. I usually mix my seasoning in one by one, constantly moving the food around so it is evenly distributed. Continually cook for about 10 minutes. Once the tofu has a nice texture and the taste is absolutely amazing, then add spinach. *Keep in mind that the turmeric will give it the “egg” taste and the salzon will give it a “meaty” taste. so use these ingrediency more for a power packed flavor!!
