Ingredients:
Organic Jasmine rice (white or brown)
Water (for rice)
1 tbsp. vegetable cooking oil
2 tbsp. Sazón (sprinkle evenly)
½ cup of organic tomato sauce
1 tbsp. organic tomato paste
2 tbsp. Casero total seasoning
½ cup of Spanish green olives pitted (sliced in half)
15 0z. can of Gandules (pigeon peas)
Pepper, to taste
Directions:
Put vegetable oil into sauce pan and put the stove on medium heat. Add, water (according to the measurement on the package of rice) (I sometimes add about ¼ more water because I add the beans and other ingredients to the pot). Start to bring to a boil. Then, add Sazón, tomato sauce, tomato paste, total seasoning, pepper, Spanish olives and Gandules. Once the water is boiling then add rice according to package. Put heat on low and cover. Continually, stir (add water little by little if necessary, to soften the rice). Make sure the rice is firm, not mashed. One way to know the rice is good is if you take a fork and the rice moves through the fork and doesn’t get stuck on it. Once, done serve and enjoy!! MANGIA!!

This dish was made along with organic Romaine lettuce, Kalamata olives and Roma tomatoes topped with Italian dressing. The vegan meat is by Gardein, Mandarin Orange chicken.
