Cook time: 1 hour
Serves: 6
Ingredients : (use organic, fresh ingredients, if possible)
2 lb. Red potatoes, peeled and cut into squares
2 celery stocks, finely diced
2 carrots, peeled and diced
1 small white onion, diced
3 garlic cloves, minced
1 to 2 fresh lime juice, squeezed
1 cup of vegan or regular mayonnaise
Hand full of cilantro and parsley, finely chopped (optional)
Salt/pepper to taste
Directions :
Peel, dice red potatoes and boil until tender. Drain and chill about 15mins.
Boil already prepared carrots until tender. Drain and chill about 15mins.
*best to boil both carrots and potatoes at same time in different pots, saves time
Mix all ingredients together and chill about 15 mins and Enjoy!
